Super simple recipe to make jam shortbread, one of the melting shortbread cookies filled with the jam of your choice (For about twenty cookies).

In a large container, combine the dry ingredients, flour, icing sugar, salt, almond meal.
Add the butter cut into pieces and rub the preparation between your hands until it has a sandy texture.
Add the eggs and mix first with a wooden spoon, then finish picking up the dough with your hands to form a homogeneous ball of dough.
Cover with cling film and place in the fridge for at least 20 minutes.
Roll out the dough to a thickness of 3 mm (use 2 sheets of baking paper to spread the dough more easily).
Using a round fluted cookie cutter with a diameter of about 5 cm (a model for Linzer cookies), cut out rounds of dough and rounds with a star-shaped hole in the center.
Baking the shortbread cookies
Arrange them on a baking sheet covered with baking paper.
Preheat the oven to 356°F / 180°C and bake the cookies for about 8-10 minutes, after baking let them rest for a few minutes before moving the cookies which are still brittle.
Assembly the linzer cookies
Garnish with a little strawberry jam on the cookies that go underneath, then cover with the cookies on top.
