Description

Soft and chewy cinnamon sugar cookies with crisp edges and a sweet cinnamon coating. Quick and easy to make — a cozy treat for any occasion. ( about 12 cookies)


Ingredients

For the cookies

  • 115 g (½ cup) unsalted butter, softened
  • 120 g (½ cup + 2 tbsp, packed) light brown sugar
  • 1 large egg, at room temperature
  • 1 ½ tsp pure vanilla extract
  • 165 g (1 ⅓ cups) all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ tsp ground cinnamon

For the coating:

  • 40 g (3 tbsp) granulated sugar
  • 1 tsp ground cinnamon

Instructions

  1. In a bowl, whisk together the flour, baking soda, salt, and ground cinnamon.
  2. In another large bowl, beat the softened butter and brown sugar with an electric mixer for 2–3 minutes until smooth and creamy.
  3. Add the egg and vanilla extract, and beat again for 1–2 minutes until fully incorporated.
  4. Fold in the dry ingredients with a spatula until a soft dough forms. Cover the bowl and chill the dough in the refrigerator for about 30 minutes.
  5. Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
  6. In a small bowl, mix the granulated sugar and ground cinnamon for the coating.
  7. Scoop the dough into balls using a small cookie scoop or your hands, then roll each ball in the cinnamon sugar mixture until well coated.
  8. Place the balls on the prepared baking sheet, spacing them about 2 inches (5 cm) apart.
  9. Bake for 8–11 minutes, until the edges are set but the centers are still soft.
  10. Let cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Storage: Keep the cookies in an airtight container at room temperature for up to 4 days. You can also freeze the baked cookies for up to 2 months.

  • Don’t skip chilling – 30 minutes in the fridge helps the cookies bake evenly.
  • Don’t overbake – remove when the centers look soft for chewy cookies.
  • Room-temperature egg blends better with the butter.
