Description

A delicious Nutella Cheesecake Brownie featuring a layer of melt-in-your-mouth brownie, creamy cheesecake, and a swirl of Nutella (for an 8 inch/20cm square brownie - 16 servings).


Ingredients

Chocolate Brownies

  • 113 g (1/2 cup) Butter - unsalted
  • 150 g (5.3 oz or 1 cup) Baking chocolate - semi-sweet
  • 130 g (2/3 cup) Granulated sugar
  • 2 Eggs - room temperature
  • 1 tsp Vanilla extract
  • 30 g (1/4 cup) Unsweetened cocoa powder
  • 90 g (3/4 cup) Flour -  cake flour
  • 1 pinch of Salt

Vanilla Cheesecake

  • 220 g (7.8 oz or 1 cup) Cream cheese
  • 1 Egg - room temperature
  • 50 g (1/4 cup) Granulated sugar
  • 1 tsp Vanilla extract
  • Nutella Swirl

Instructions

  1. Melt butter and dark baking chocolate together in a double boiler until fully melted.
  2. In a large bowl, beat the eggs, sugar, and vanilla with an electric mixer for about 2 minutes until frothy.
  3. Incorporate the melted chocolate and butter mixture into the egg mixture.
  4. Sift the flour, cocoa powder, and salt together, then fold them into the mixture gently with a spatula.
  5. Pour the batter into a lined brownie pan and set aside.
  6.  In a separate bowl, whisk cream cheese, egg, sugar, and vanilla until smooth.
  7. Pour the cream cheese mixture over the brownie layer and smooth it out with an offset spatula.
  8. Dot with teaspoons of slightly melted Nutella and use a knife to create swirls.
  9. Preheat the oven to 180°C (350°F) and bake for about 25-30 minutes.
  10. Allow to cool completely before unmolding and cutting into 16 equal portions.

Notes

*For the best baking results, I recommend using a digital scale to measure ingredients in grams instead of cups. Precise measurements ensure consistent and perfect outcomes every time.

Storage: Store in an airtight container at room temperature for up to 3 days or refrigerate for up to 1 week. For longer storage, freeze individual slices wrapped in plastic for up to 3 months.
