BISCOFF BUTTER COOKIES

Indulge in soft, chewy Biscoff butter cookies stuffed with Lotus spread. Easy to make, they're a delightful treat!

Place teaspoonfuls of lotus spread on a baking tray and freeze for 20 minutes.

In a large bowl, mix butter and sugar with a hand mixer.

Add the egg, vanilla and lotus spread and beat again to incorporate.

Add the dry ingredients, flour, baking powder, lotus cookie crumbs and salt and mix with a rubber spatula.

Finish by adding pieces of biscoff cookie and gently folding them in.

Shape dough into balls and place frozen biscoff spread hearts in the center, then place them spaced out on a baking sheet lined with baking paper.

Bake in a preheated oven at 350°C for about 12 minutes, then cool before serving.
