Make this traditional French pastry (king cake) made with a flaky puff pastry and filled with a delicious almond cream

Step 1 :Make the puff pastry

Make your own puff pastry, following  this easy classic recipe or take 2 sheets of store-bought puff pastry.

Step 2 : Frangipane cream

Make the pastry cream and the almond cream and mix them together in a large bowl until you have a smooth mixture.

Step 3 : Set the galette

Roll out the puff pastry to a thickness of 3 mm and mark a circle with a wide plate. Then fill the center with the frangipane cream and don't forget the bean.

Step 4 : Cut the shape

Cover with the second sheet of dough and press to seal. Then using a plate or pastry ring, cut out a round shape with a knife.

Step 5 : Scratch the top

Brush the top of the dough with egg yolk. Then draw with a knife the top of the dough.

Step 6 : Baking

Bake the galette de rois at 350°F /180°C for 40 - 45minutes until golden on top.

Step 7 : Enjoy !

Serve the galette des rois a little warm and choose the king or queen of the day!
