Melted butter

Materials You Need

- Stand mixer - French rolling pin (picture)

Mix all the ingredients for the dough in your stand mixer until you obtain a homogeneous dough ball.

Cut the dough crosswise, cover with plastic wrap and place in the fridge for 2 hours.

Using a sheet of baking parchment, roll out the butter into a square sheet, then place in the fridge for 2 hours.

Roll out the dough larger than the butter square, place the butter in the center and wrap completely.

Make a double wallet fold, folding 1/3 of the top edge, then folding 2/3 of the bottom edge, then folding again in 2.

Turn the dough to the right and make a simple fold, roll out the dough, fold over 1/2 of the top edge then fold over the bottom edge and cover with plastic wrap and leave to rest in the fridge for 1 hour.

After the chill time, make another double fold followed immediately by a single fold and let rest for another 1 hour. Then finish with a single fold and your puff pastry is ready to use.

Tips for this recipe

Avoid excess flour Use a minimal amount of flour when rolling out the pastry to avoid making it too dry.  – Keep It Cold: To achieve a flaky texture and prevent the butter from leaking out, ensure the puff pastry dough remains cold throughout the process. – Freezer Shortcut: To save time during preparation, let the dough sit in the freezer for 30 minutes between rounds of rolling and folding.
