This brioche is a traditional and emblematic Swedish recipe. Soft bread rolls flavored with cinnamon and cardamom spices and topped with sugar pearls.

Step 1 : Rehydrate the yeast

Add the active dry yeast to the warm milk and add the ground cardamom. Stir with a spoon and let stand for 10 minutes.

Step 2 : Cardamom bread

Mix all the ingredients together in the bowl of your stand mixer with the dough hook until you have a smooth ball. Then let the dough rise for 2 hours at room temperature.

Step 3 : Cinnamon filling

Combine filling ingredients, brown sugar , melted butter, and cinnamon ground and set aside

Step 4 : Fill the brioche

Roll out the dough with a rolling pin to form a large rectangle. Spread the cinnamon filling over the entire surface of the dough.

Step 5 : Shape the rolls

Fold the dough in 3 and roll it out again to enlarge it. Cut into strips along the width. Twist the strips on itself and form a knot. Place on a baking sheet lined with parchment paper and let rise 1 hour.

Step 6 : Bake in the oven

Brush on a layer of egg wash and sprinkle with sugar pearls Bake in a preheated oven at 350°F until Kanelbullar  are golden brown on top. Let them cool down a bit.

Step 7 : Enjoy !
