LEMON POPPY

SEED MUFFINS

Cream butter, sugar and zest with an electric mixer.

Add the eggs and vanilla and beat to incorporate.

Add milk and lemon juice and stir to blend.

Add the flour, salt, baking powder and poppy seeds and stir to combine.

Pour into a paper-lined muffin tin and bake at 428°F for 5 minutes, then 350°c for 20 minutes.

Place the powdered sugar and lemon juice in a bowl and mix with a fork.
