In a large mixing bowl, combine the eggs, sugar, oil and vanilla.

Add the dry ingredients and buttermilk alternately, and pour the batter into 3 lined cake pan.

Bake at 320°F for 35 minutes, then cool completely on a cake rack, upside down.

In a large bowl, whisk together mascarpone, heavy cream, powdered sugar, oreo cookie crumb and vanilla until fluffy and stiff.

Apply buttercream around the edge, fill the inside with Oreo frosting, add chopped Oreo cookies and repeat for all layers of chocolate cake.

Cover the entire cake with the Oreo buttercream and smooth with a spatula and a icing smoother.

Drizzle the melted chocolate over the top of the cake, decorate with the remaining Oreo buttercream and place in the fridge for 1 hour before serving.
