Description

Delicious homemade blueberry compote with fresh or frozen blueberries, sugar and lemon juice and lemon zest (for a 1 cup jar, approx. 300 g).


Ingredients

  • 400 g (2 cups) Blueberries - fresh or frozen
  • 60 g (1/3 cup) Sugar - granulated
  • 1/2 Lemon juice and lemon zest

Instructions

  1. Place all the ingredients in a small saucepan, the blueberries, sugar, and zest and lemon juice.
  2. Heat over medium heat until boiling, then lower the heat a little and simmer gently for around 10 - 15 minutes, stirring occasionally, until the mixture looks like a jam with chunks of blueberries.
  3. Leave to cool to room temperature before placing it in a glass jar with a tight-fitting lid and refrigerating until chilled.

Notes

Storage: Up to one week in the fridge and up to 3 months in the freezer.

Sugar-free compote: Replace sugar with natural sugar such as honey or maple syrup.

Thicker texture: Add a tablespoon of flour or cornstarch or cook longer over low heat to evaporate liquids.

Make a blueberry sauce: Cook for just enough time for the blueberries to soften, then mix in a blender and pass through a fine sieve to obtain a smooth coulis.

Blueberry puree: After making the compote recipe, put it through the blender and also the sieve to obtain a thick, smooth puree, perfect for flavoring your frosting, buttercream, and more.
