How to make easy healthy coconut date energy balls with this crunchy and delicious recipe (For about 25 balls)
Ingredients
- 130 g ( 1 2/3 cups) Oatmeal - rolled oats
- 40 g (1/3 cup) Coconut flour - or almond flour
- 100 g (1/2 cup) Almond butter - or peanut butter
- 8 Dates
- 80 g (1/4 cup) Honey - or maple syrup
- 60 g (1/3 cup) Almonds and pecans chopped nuts
- 50 g (1/3 cup) Chocolate chips - semi-sweet
- 1/2 tsp Vanilla extract
- 1 pinch Sea salt
Instructions
- Start by placing the pitted dates, almond butter, vanilla and honey in the blender and blend until smooth.
- Add the remaining ingredients, oatmeal, coconut flour, almonds and pecans, chocolate chips and salt.
- And mix on the first speed of the mixer to blend everything together for about 1 - 2 minutes.
- Then transfer the mixture to a bowl and place it in the refrigerator for about 30 minutes
- And form medium sized balls between your hands or with cookies scoop.
Notes
Storage: Up to 2 weeks at room temperature in an airtight container and up to 3 months in the freezer.
