Description

How to make easy healthy coconut date energy balls with this crunchy and delicious recipe (For about 25 balls) 


Ingredients

  • 130 g ( 1 2/3 cups) Oatmeal - rolled oats
  • 40 g (1/3 cup) Coconut flour - or almond flour
  • 100 g (1/2 cup) Almond butter - or peanut butter
  • 8 Dates
  • 80 g (1/4 cup) Honey - or maple syrup
  • 60 g (1/3 cup) Almonds and pecans chopped nuts
  • 50 g (1/3 cup) Chocolate chips - semi-sweet
  • 1/2 tsp Vanilla extract
  • 1 pinch Sea salt

Instructions

  1. Start by placing the pitted dates, almond butter, vanilla and honey in the blender and blend until smooth.
  2. Add the remaining ingredients, oatmeal, coconut flour, almonds and pecans, chocolate chips and salt.
  3. And mix on the first speed of the mixer to blend everything together for about 1 - 2 minutes.
  4. Then transfer the mixture to a bowl and place it in the refrigerator for about 30 minutes
  5. And form medium sized balls between your hands or with cookies scoop.

Notes

Storage: Up to 2 weeks at room temperature in an airtight container and up to 3 months in the freezer.
