Description

The recipe for homemade buns, soft brioche rolls perfect in sweet or savoury (For about 6 rolls)


Ingredients

  • 25 gr Dry baker's yeast
  • 300 ml Warm water
  • 500 gr Flour
  • 50 g Milk powder
  • 50 g Sugar
  • 100 g Butter (soft)
  • 10 g salt
  • 1 egg (for gilding)

Instructions

  1. Dissolve the baker's yeast in warm water.
  2. In the bowl of your mixer with the hook, place the flour, sugar, salt and powdered milk and mix for a few moments, then add the soft butter and the water containing the yeast.
  3. Beat at medium speed for about 10 minutes, until the dough comes away from the bowl and forms an elastic but not too sticky ball (if the dough is too sticky add 1-2 tablespoons of flour and continue mixing for a few more minutes).
  4. Pour a small amount of flour over the dough and place it on your work surface.
  5. Divide your dough into 6 balls of about 90-100 gr.
  6. Place the balls of dough on a baking tray covered with baking paper, space each ball sufficiently and cover them with a cloth.
  7. Let your rolls grow for about 1 to 1h30.
  8. Preheat your oven to 410°F / 210 °C, beat the egg in a small container and apply a layer of gilding to each ball of dough with a pastry brush and then put it in the oven for about 15 to 20 minutes.
