In a large bowl, whisk together the vegetable oil, eggs and vanilla.
Add buttermilk or plain yoghurt and stir again to incorporate.
Add the dry ingredients, flour, baking powder and salt and mix to incorporate.
Add the chopped strawberries, then pour the batter into the prepared pan, adding a few more strawberries on top before baking in a preheated oven.
Leave the coffee cake to cool completely before dusting with powdered sugar and serving with a scoop of vanilla ice cream.
Replace strawberries with other fruits like raspberry, apple and more or add extras like almond flour which you can find out more on my blog.
