Finely blend the biscoff cookies in a food processor, then place in a medium bowl with the cream cheese.
Mix with your hands until you have a smooth, homogeneous paste that is not too sticky.
Roll the dough into balls between your palms and place in the fridge or freezer to harden.
Melt white chocolate in a double boiler or in the microwave. Dip the balls in the melted chocolate until completely covered, then leave to harden on a sheet of parchment paper.
Decorate with melted biscoff butter spread and biscoff cookie crumbs and enjoy.
