In a large mixing bowl place the flour, salt and sugar and make a well in the center. Add the beaten eggs and vanilla.
Gradually drizzle the milk over the eggs mixture while stirring with a pastry whisk until the mixture is smooth and fluid.
Heat a crepe pan over medium heat. Add a ladleful of crepe batter and cook the crepe for 1-2 minutes per side.
Place baked crepes on a plate on top of each other.
Enjoy the hot crepes with the filling of your choice, Nutella, brown sugar, maple syrup, fresh fruit and whipped cream.
