Start by preparing my vanilla sponge cake. It's soft and tender, perfect for a layer cake.

My lemon curd is creamy and perfectly tart, made with whole eggs, sugar, lemon juice and butter.

Mascarpone frosting is a light and creamy filling made with cold mascarpone, heavy cream, powdered sugar and vanilla.

Italian meringue is made from a sugar syrup, a mixture of water and sugar into which the egg whites are whipped to form a meringue.

Each layer is filled with lemon filling in the center, followed by a layer of mascarpone frosting.

Cover the entire cake with the Italian meringue and blowtorch to give a burnt effect, then serve.
