Ingredients

  • 120 ml (½ cup) heavy cream - full-fat

  • 6 egg whites - room temperature
  • 30 g (1 ½ tbsp) granulated sugar
  • A pinch of sea salt

Instructions

  1. Break the chocolate into pieces and melt it using a double boiler (bain-marie) or in the microwave, stirring until smooth.
  2. In a saucepan, heat the heavy cream over low heat until warm but not boiling. Gradually pour it over the melted chocolate in 2-3 additions, whisking well after each to create a smooth mixture.
  3. Whisk the egg yolks into the chocolate mixture until fully combined.
  4. In a stand mixer or large bowl, beat the egg whites, sugar, and salt on high speed until stiff peaks form.
  5. Gently fold the whipped egg whites into the chocolate mixture using a spatula, making slow, circular motions until smooth and airy.
  6. Divide the mousse into ramekins or a large bowl and refrigerate for at least 2 hours before serving.
