- 120 g (½ cup + 2 tbsp, packed) light brown sugar
- 1 large egg, at room temperature
- 1 ½ tsp pure vanilla extract
- 165 g (1 ⅓ cups) all-purpose flour
- ½ tsp baking soda
- ¼ tsp salt
- ½ tsp ground cinnamon
For the coating:
- 40 g (3 tbsp) granulated sugar
- 1 tsp ground cinnamon
Instructions
- In a bowl, whisk together the flour, baking soda, salt, and ground cinnamon.
- In another large bowl, beat the softened butter and brown sugar with an electric mixer for 2–3 minutes until smooth and creamy.
- Add the egg and vanilla extract, and beat again for 1–2 minutes until fully incorporated.
- Fold in the dry ingredients with a spatula until a soft dough forms. Cover the bowl and chill the dough in the refrigerator for about 30 minutes.
- Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
