Description

Soft and fluffy mini chocolate chip muffins packed with mini chocolate chips, with moist centers and perfectly domed golden tops. (Makes about 17 mini mufins)


Ingredients

  • 325 g (2 ¾ cups) cake flour
  • 7 g (1 ¾ tsp) baking powder
  • 2.5 g (½ tsp) baking soda
  • 2 g (⅓ tsp) salt
  • 70 g (5 tbsp) unsalted butter, softened
  • 70 g (⅓ cup) vegetable oil
  • 170 g (¾ cup + 2 tbsp) granulated sugar
  • 2 large eggs, room temperature
  • 1 ½ tsp vanilla extract
  • 275 g (1 cup + 2 tbsp) buttermilk, room temperature
  • 130 g (¾ cup) mini chocolate chips, plus more for topping

Instructions

  1. Line a mini muffin pan with paper liners.
  2. Mix the softened butter, vegetable oil and sugar until smooth and well combined.
  3. Add the eggs one at a time, then mix in the vanilla extract.
  4. In a separate bowl, sift together the cake flour, baking powder, baking soda and salt.
  5. Add the dry ingredients alternately with the buttermilk, mixing gently just until combined.
  6. Fold in the mini chocolate chips with a spatula without overmixing the batter.
  7. Divide the batter between the muffin liners, filling each one to the top, then add a few extra chocolate chips on top.
  8. Let the filled muffin pan rest at room temperature for about 30 minutes for taller, domed muffins.
  9. Preheat the oven to 425°F (220°C) and bake for 5 minutes. Without opening the oven door, reduce the temperature to 350°F (180°C) and bake for about 10 minutes more, until golden and baked through.
  10. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack.

Notes

Storage: Store in an airtight container at room temperature for 3–4 days, or freeze for up to 3 months.

Tips:

  • Use room-temperature eggs and buttermilk.
  • Prefer mini chocolate chips for even distribution.
  • Don’t overmix the muffin batter.
  • Fill the liners to the top for tall, domed muffins.
  • Rest the batter for 30 minutes before baking if possible.
  • Don’t open the oven when lowering the temperature.
