- 325 g (2 ¾ cups) cake flour
- 7 g (1 ¾ tsp) baking powder
- 2.5 g (½ tsp) baking soda
- 2 g (⅓ tsp) salt
- 70 g (5 tbsp) unsalted butter, softened
- 70 g (⅓ cup) vegetable oil
- 170 g (¾ cup + 2 tbsp) granulated sugar
- 2 large eggs, room temperature
- 1 ½ tsp vanilla extract
- 275 g (1 cup + 2 tbsp) buttermilk, room temperature
- 130 g (¾ cup) mini chocolate chips, plus more for topping
Instructions
- Line a mini muffin pan with paper liners.
- Mix the softened butter, vegetable oil and sugar until smooth and well combined.
- Add the eggs one at a time, then mix in the vanilla extract.
- In a separate bowl, sift together the cake flour, baking powder, baking soda and salt.
- Add the dry ingredients alternately with the buttermilk, mixing gently just until combined.
- Fold in the mini chocolate chips with a spatula without overmixing the batter.
