    Jump to Recipe

This coffee ganache is a light, fluffy whipped frosting made with white chocolate, heavy cream, and espresso powder.

This whipped coffee ganache has a smooth, airy texture and a rich espresso flavor, perfect for filling, frosting, and decorating cakes.

I love using this white chocolate coffee ganache instead of buttercream for a creamy, easy-to-pipe frosting that holds its shape beautifully.

Why You’ll Love This Coffee Ganache

    • Rich coffee flavor – A delicious espresso taste balanced with creamy white chocolate.
    • Light & fluffy – A silky whipped texture without the heaviness of buttercream.
    • Perfect for decorating – Ideal for filling layer cakes, frosting cupcakes, and piping beautiful swirls.

    Ingredients You’ll Need

This whipped coffee ganache is made with just 3 ingredients for a smooth, creamy frosting with a rich espresso flavor.

    • White chocolate – Use good-quality white chocolate with cocoa butter for a smooth, stable ganache.
    • Heavy whipping cream – At least 35% fat, divided into hot and cold portions for a light, fluffy texture.
    • Instant espresso powder – Adds a rich coffee flavor without changing the ganache’s consistency.

    How to Make Coffee Ganache

This coffee ganache is my classic whipped white chocolate ganache flavored with espresso powder.

Dissolve the espresso powder in the hot cream.
Pour the hot coffee cream over the melted white chocolate and mix until smooth.
Add the cold cream and blend until smooth.
Cover with plastic wrap touching the surface and chill for at least 6 hours.

Whip until fluffy, firm but still soft and spreadable. Do not overwhip.

    Tips for Success

    • Dissolve the coffee: Mix espresso powder into the hot cream before adding it to the melted white chocolate.
    • Use quality white chocolate: Choose one with cocoa butter for a smooth ganache.
    • Use full-fat cream: At least 35% fat for a stable whipped texture.
    • Chill thoroughly: Refrigerate for at least 6 hours, preferably overnight.
    • Don’t overwhip: Keep the ganache fluffy, firm but still soft and spreadable.
    • For smooth frosting: Use a warm, dry metal scraper for a clean finish on layer cakes.

    Ways to Use Coffee Ganache

This whipped coffee ganache is perfect for filling, frosting, and decorating your favorite desserts.

    • Layer cakes: Fill and frost my cappuccino cake for a rich coffee flavor.
    • Cupcakes: Pipe beautiful swirls onto vanilla or chocolate cupcakes.
    • Macarons: Use as a creamy coffee-flavored filling.
    • Chocolate cakes: Pair with chocolate sponge layers for a delicious mocha flavor.
    • Cake fillings: Spread between cake layers for a smooth, creamy texture.

Try this whipped coffee ganache on my mocha cupcakes or use it to fill and frost my cappuccino cake.

    Storage

Store whipped coffee ganache in an airtight container in the refrigerator for up to 3 days. Freezing is not recommended.

    Variations

    • Mocha ganache: Add a little cocoa powder for a chocolate-coffee flavor.
    • Stronger espresso flavor: Increase the instant espresso powder slightly.
    • Vanilla coffee ganache: Add a teaspoon of vanilla extract.
    • Caramel coffee ganache: Add a little salted caramel for a sweeter twist.

Try my coffee buttercream for a delicious alternative!

    Recipe Questions

Can I make coffee ganache ahead of time?

Yes! Prepare the ganache a day ahead and refrigerate overnight. Whip just before using.

Can I use instant coffee instead of espresso powder?

Yes, instant coffee works well, but espresso powder gives a stronger flavor.

Why is my whipped coffee ganache grainy?

Overwhipping can cause the ganache to become grainy or split. Stop as soon as it’s fluffy and spreadable.

Can I use coffee ganache for piping?

Absolutely! It’s perfect for piping swirls on cupcakes and decorating layer cakes.

This whipped coffee ganache is a light, creamy frosting made with white chocolate, heavy cream, and espresso powder. Perfect for filling and decorating cakes and cupcakes.

    Ingredients

    • 250 g (8.8 oz) white chocolate, finely chopped
    • 187 g (¾ cup + 1 tbsp) heavy whipping cream, 35% fat, for heating

    1. Melt the chocolate: Finely chop the white chocolate and melt in the microwave or over a double boiler until smooth.
    2. Heat the coffee cream: Heat the first portion of cream with the espresso powder, stirring until dissolved and just simmering.
    3. Emulsify: Gradually pour the hot coffee cream over the melted chocolate, stirring until smooth and glossy.
    4. Add the cold cream: Pour in the cold cream and blend with an immersion blender until smooth.
