Description

Super-comforting spiced pumpkin chai latte recipe with fresh pumpkin puree, chai concentrate, pumpkin pie spice, almond milk and maple syrup (for 2 small or one large glass).


Ingredients

  • 250 ml (1 cup) almond milk - or dairy milk or plant-based milk
  • 2 black tea bags
  • 1 cinnamon stick - or 1/2 tsp ground cinnamon.
  • 1 star anise - optional
  • 4 cloves
  • 4 cardamom seeds
  • 1 tsp liquid vanilla
  • 2 tbsp. maple syrup - or brown sugar
  • 180 ml (3/4 cup) water
  • 4 tbsp. Pumpkin purée
  • 1 tsp Pumpkin pie spice - or allspice mix

Instructions

Chai concentrate

  1. Place the black tea bags, cinnamon stick, star anise, cloves, cardamom pods, maple syrup, vanilla extract and water in a small saucepan.
  2. Cook over a low heat for 5 minutes until just starting to simmer, then leave to infuse for a further 10 minutes if possible.
  3. Strain the chai tea concentrate through a sieve to remove the seeds.

Making the latte

  1. Place the chai tea concentrate, pumpkin puree and pumpkin pie spice mix in a small or medium saucepan.
  2. Add the milk and heat over medium heat just warm.
  3. Pour into 2 medium-sized glasses or one large glass.
  4. Serve with a little whipped cream and enjoy warm, or serve cold with ice cubes.

Notes

Storage: Chai concentrate can be stored in a jar in the fridge for around 1 week. The drink should be consumed quickly.

Replace homemade chai concentrate with store-bought chai syrup or pumpkin syrup.

You can add a shot of espresso coffee for a full-bodied drink.
