Melt the butter and chocolate together in a bain-marie or in the microwave.

Beat the eggs, vanilla and sugar with an electric mixer for 2 minutes until glossy.

Stir in the melted chocolate mixture, then gently add the dry ingredients.

Add the Lotus biscoff cookie pieces and gently stir in.

Pour batter into prepared brownie pan, add biscoff cookie butter spread swirls and decorate with Lotus cookies.

Bake in a preheated 350°F oven for about 25 minutes, then cool completely before unmolding.

Cut into squares and serve with vanilla ice cream.
