Place the chocolate and butter in a bowl and melt in a double boiler or microwave until liquid.
In a large bowl, whisk eggs with vanilla and sugar for 3 minutes until fluffy and frothy.
Add the melted chocolate and butter mixture and mix with an electric mixer for 1 minute.
Add the dry ingredients, flour, unsweetened cocoa powder and salt. And incorporate them with a spatula.
Add the oreo pieces and mix again with a spatula to incorporate them.
Preheat the oven to 350°F / 180°C and bake the Oreo brownies for about 30 minutes. Then let it cool down completely before unmolding it.
Cut into 16 pieces and serve with vanilla ice cream.
