Prepare the genoise sponge and cut into 2 layers.

Prepare the diplomat cream filling at the last moment before assembling the fraisier.

Place the strawberries against the pastry ring and the first sponge layer in the center, then brush the sponge with sugar syrup.

Garnish with diplomat cream, then add strawberry pieces in the center.

Cover everything with diplomat cream and place the second layer of cake.

Decorate with the remaining crème diplomate and strawberries and chill in the fridge for 1 hour.

Serve the strawberries with a berry coulis and enjoy.
