    Jump to Recipe

Apple pie filling is a quick homemade cinnamon apple filling that's perfect for pies, crisps, turnovers, and your favorite fall desserts.

This homemade apple pie filling recipe comes together in minutes with fresh apples, warm spices, and simple pantry ingredients.

I use this filling in my American Apple Pie because it stays thick, flavorful, and never turns watery after baking.

    Why You'll Love This Recipe

    • Quick to make – Ready in about 15 minutes.
    • Perfect texture – Thick, glossy, and never watery.
    • So versatile – Great for pies, crisps, pastries, and more.

Best Apples for Apple Pie Filling

The best apple pie filling comes from a mix of sweet and tart apples that hold their shape while baking.

    • Granny Smith – Tart, firm, and perfect for balancing sweetness.
    • Honeycrisp – Crisp, juicy, and naturally sweet.
    • Pink Lady – Sweet-tart with great texture.
    • Golden Delicious – Softens slightly for a smoother filling.
    • Royal Gala – Sweet and mild for a classic homemade flavor.

Tip: I like combining Granny Smith with Honeycrisp or Pink Lady for the best balance of flavor and texture.

    Ingredients

    • Apples – Granny Smith, Honeycrisp, Pink Lady, Golden Delicious, or Royal Gala.
    • Butter – Adds richness and helps coat the apples as they cook.
    • Brown Sugar – Adds sweetness with a light caramel flavor.
    • Lemon juice – Brightens the flavor and balances the sweetness. Ground cinnamon – Adds warm, classic apple pie flavor.
    • Vanilla extract – Enhances the apples and spices.
    • Salt – A pinch brings out the sweetness and deepens the flavor.

    Tips for this recipe

    • Use a mix of apples – Combine sweet and tart varieties for the best flavor.
    • Cut evenly – Similar-sized pieces cook at the same rate.
    • Don't overcook – Keep the apples tender, not mushy.
    • Cool completely – Let the filling cool before using it in pies or pastries.
    • Adjust the sweetness – Add more or less sugar depending on your apples.

How to Make Apple Pie Filling

Peel, core, and chop the apples into small or large pieces, depending on how you plan to use the filling.

Toss the apples with the lemon juice and cinnamon until evenly coated.

Melt the butter with the brown sugar, granulated sugar, vanilla, and salt in a large skillet over medium heat.

Add the apples and cook for 10–15 minutes, stirring occasionally, until tender and lightly caramelized.

Let the filling cool completely before using it in pies, pastries, or storing it.

Ways to Use Apple Pie Filling

    • Ice Cream or Yogurt – A quick and delicious dessert topping.
    • American Apple Pie – The perfect filling for a classic homemade pie.
    • Dutch Apple Pie – Top with a buttery streusel instead of a lattice crust.
    • Apple Crisp or Crumble – Spoon over the apples before adding the topping.
    • Apple Turnovers – Fill puff pastry for an easy handheld dessert.
    • Apple Pie Bars – Layer between a buttery crust and crumble topping.
    • Cheesecake Topping – Spoon over baked cheesecake before serving.
    • Pancakes or Waffles – Serve warm for a cozy fall breakfast.

This filling is perfect for my classic American Apple Pie recipe.

    Storage Instructions

    • Refrigerator: Store in an airtight container for up to 5 days.
    • Freezer: Freeze for up to 3 months and thaw overnight in the refrigerator before using.
    • Reheat: Warm gently in a saucepan or microwave before serving or baking.

    Recipe Variations

    • Caramel Apple Filling – Stir in salted caramel for a richer flavor.
    • Maple Apple Filling – Replace part of the sugar with maple syrup.
    • Spiced Apple Filling – Add nutmeg, cloves, or apple pie spice.
    • Berry Apple Filling – Mix in fresh or frozen blueberries.
    • Chunky Apple Filling – Leave the apples in larger pieces for more texture.
