Black cocoa brownies are intensely fudgy and chocolatey, with a naturally deep dark color and rich cocoa flavor.

Stack of fudgy black cocoa brownies

These black cocoa brownies are made with black cocoa powder and dark chocolate for a deep chocolate flavor without being overly sweet.

I love how the black cocoa gives them an intense dark color while the center stays dense, moist, and fudgy with a thin crackly top.

    Why You’ll Love This Recipe

    • Deep black color – Naturally dark from black cocoa powder.
    • Extra fudgy – Dense, moist center with a thin crackly crust.
    • Rich chocolate flavor – Dark and chocolatey without being overly sweet.

    Ingredients you need

    • Semi-sweet chocolate – Use semi-sweet or darker chocolate, depending on how intense you want the chocolate flavor.
    • Butter – Unsalted butter, melted together with the chocolate.
    • Eggs – Use room-temperature eggs for easier mixing.
    • Sugar – Regular granulated white sugar.
    • Vanilla extract – Use pure vanilla extract for the best flavor.
    • All-purpose flour – Regular all-purpose flour, measured accurately.
    • Black cocoa powder – Use 100% black cocoa powder for the characteristic deep black color and dark cocoa flavor.
    • Salt – Fine salt to balance the sweetness and chocolate flavor.
    • Chocolate chips – Use semi-sweet or dark chocolate chips for extra pockets of melted chocolate throughout the brownies.

How to Make Black Cocoa Brownies

This recipe is based on my classic brownies, made with black cocoa powder for a deeper color and rich cocoa flavor.

    Butter and chocolate before melting
Melt the chocolate and butter together until smooth, then set aside to cool slightly.
Eggs, sugar and vanilla for black cocoa brownies
Beat the eggs and sugar for 2–3 minutes until pale, thick, and slightly foamy, then mix in the vanilla.
Whipped eggs and sugar with melted chocolate mixture
Pour in the melted chocolate mixture and mix gently until smooth and combined.
Black cocoa brownie batter with dry ingredients
Add the flour, black cocoa powder, and salt and fold gently with a spatula just until no dry streaks remain.
Black cocoa brownie batter with chocolate chips
Fold in the chocolate chips without overmixing the brownie batter.
Black cocoa brownie batter in square baking pan
Pour the batter into a parchment-lined pan and spread it evenly, adding a few extra chocolate chips on top if desired.
Black cocoa brownies cut into squares

Bake until the edges are set and the center is still slightly soft, being careful not to overbake for a fudgy texture.

Let the brownies cool completely in the pan before slicing into squares for clean cuts.

    Tips for this recipe

    • Beat the eggs and sugar well to help create a thin, shiny crackly top.
    • Use quality black cocoa powder for a naturally deep black color and rich cocoa flavor.
    • Fold the dry ingredients gently just until combined to avoid cakey brownies.
    • Don’t overbake to keep the center dense, moist, and fudgy.
    • Cool completely before slicing for clean squares and the best fudgy texture.

    Storage

Store black cocoa brownies in an airtight container at room temperature for up to 4 days, or freeze for up to 3 months.

    Recipe Variations

    • Extra chocolate – Add more chocolate chips or chunks for extra gooey chocolate pockets.
    • Espresso – Add 1–2 teaspoons of espresso powder to deepen the cocoa flavor.
    • Nuts – Fold in chopped walnuts, pecans, or hazelnuts for extra crunch.
    • Sea salt – Sprinkle flaky sea salt on top before or after baking.
    • Halloween brownies – Add Halloween sprinkles or candy eyes for an easy seasonal version.

    Recipe Questions

    What is black cocoa powder?

Black cocoa is a heavily alkalized cocoa powder with a very dark color and smooth, distinctive cocoa flavor, similar to the cocoa flavor associated with Oreo-style cookies.

Can I use regular cocoa powder instead of black cocoa?

Yes, but the brownies will be lighter in color and have a more traditional chocolate flavor.

How do I get a shiny crust on brownies?

Beat the eggs and sugar well and combine them with the warm chocolate mixture to help dissolve the sugar and create a thin, crackly top.

How do I know when black cocoa brownies are done?

The edges should be set while the center remains slightly soft. Because black cocoa is so dark, don’t rely on color to judge doneness.

Why are my brownies cakey instead of fudgy?

Too much mixing or overbaking can produce a cakier texture. Fold the flour gently and avoid overbaking for dense, fudgy brownies.

    Description

Fudgy black cocoa brownies with a naturally deep dark color, rich chocolate flavor, melty chocolate chips, and a thin crackly top.

    Ingredients

    • 200 g (7 oz) semi-sweet chocolate, melted
    • 150 g (⅔ cup) unsalted butter
    • 200 g (1 cup) granulated sugar
    • 4 large eggs, at room temperature
    • 1½ tsp vanilla extract
    • 90 g (¾ cup) all-purpose flour
    • 50 g (½ cup) black cocoa powder
    • ½ tsp salt
    • 120 g (¾ cup) semi-sweet chocolate chips

    Instructions

    1. Preheat the oven to 350°F (175°C) and line an 8-inch (20 cm) square pan with parchment paper, leaving some overhang for easy removal.
    2. Melt the chocolate and butter together in the microwave or over a double boiler, stirring until completely smooth. Set aside for a few minutes; the mixture should stay warm but not hot.
    3. Beat the eggs and sugar with an electric mixer for 2–3 minutes until lighter in color, slightly thick, and foamy. The sugar should be partially dissolved. Mix in the vanilla extract.
    4. Slowly pour in the warm chocolate mixture while mixing on low speed, just until smooth and fully combined.
    5. Sift in the flour, black cocoa powder, and salt, then gently fold with a spatula just until no dry streaks remain. Avoid overmixing to keep the brownies dense and fudgy.
    6. Fold in the chocolate chips with a few gentle strokes, reserving some for the top if desired.
    7. Pour the batter into the prepared pan and spread it into an even layer. Sprinkle the remaining chocolate chips on top.
    8. Bake for 25–30 minutes, until the edges are set and the center is no longer liquid but still slightly soft. A toothpick inserted in the center should come out with moist crumbs, not completely clean.
    9. Let the brownies cool completely in the pan before lifting them out with the parchment paper and slicing. Cooling allows the fudgy center to fully set.
