    • Perfect size: everyone can enjoy their own little galette, which is cute and saves on leftovers!
    • More fun at the fève: With several mini galettes, everyone has a chance to become king or queen, adding to the fun.
    • A surprising variety: It's an opportunity to taste different flavors. Each mini galette can hide a different taste surprise.

    Ingredients Notes

You need these ingredients to make these individual king cakes:

    • Puff pastry: Approx. 250 g of homemade puff pastry, or you can try inverted puff pastry, quick rough puff pastry or 2 store-bought puff pastries.
    • Almond cream: An easy almond cream with just butter, sugar, eggs, almonds and vanilla or other flavoring such as orange blossom, rum or almond extract.

Step 4: Fill the inside of the mini puff pastry circles with the almond cream mixture and add your optional beans(fève) and treats (raspberries, chocolate chips, dark chocolate, Nutella etc).

Step 6: Moisten the edges with a brush and water and close the galette by placing a second circle of dough, pinching lightly to weld the edges together.

Step 7: Turn the mini galettes over and brush on a layer of egg wash, then score the top with a knife to decorate the pastry.

    Tips for this recipe

    • Choice of pastry: Use good quality puff pastry for a crisp, flaky, light result.
    • Dough thickness: Roll out the dough thinly to prevent the mini galettes from becoming too heavy.
    • Balanced topping: Don't overload with topping. A thin, even layer is ideal.
    • Freeze mini galettes before cooking: Cooking frozen galettes will result in a crisper dough, with less butter escaping during baking.

    Storage

Room temperature: Store your mini king cakes at room temperature under a tea towel or in an airtight container for up to 3 days. Reheat your king cakes in a microwave oven to restore their freshness.

In the freezer: You can freeze them for up to 3 months, when they are completely cooled, placed in preservation bags.

    Variations & Substitutions

    • Mini apple galettes: Fry apples (or pears) in a pan with a little butter and hot spices like cinnamon for a filling with autumnal flavors.
    • Salted caramel king cakes: An almond filling and homemade salted butter caramel bits.
    • Raspberry-Pistachio Mini Galettes des Rois: A delicious marriage of fresh raspberries and pistachio cream.
    • Apple-Caramel Galette: Caramelized apple filling for a sweet, gourmet taste.
    • Blueberry almond galette: A layer of blueberry filling, fresh blueberries like this recipe for frozen blueberry pie.
