Made with just two components, a quick rough puff pastry ready in 10 minutes - all ingredients are simply mixed together, followed by folding (no resting required), and that's it!
And a delicious homemade almond cream filling (frangipane cream) flavored with Nutella for an incredible flavor that's sure to please young and old alike.

- Puff pastry: Quick puff pastry here, or my classic puff pastry, inverted puff pastry or store-bought puff pastry.
- Nutella almond cream: A mixture of soft butter, powdered sugar, eggs, almond meal and Nutella spread.
How to make the Nutella stuffed French Galette des rois
Here are some quick visual instructions. Don't forget that full instructions with exact ingredients can be found in the main recipe card below!
Step 1: Prepare the quick puff pastry according to my advice and instructions, or use store-bought puff pastry directly.
Step 2: Place all the ingredients - butter, powdered sugar, almond meal and eggs - in a bowl.
Mix with an electric mixer at medium speed until smooth and creamy.
Then add the spread and mix again to incorporate. Cover with plastic wrap and chill until ready to assemble.
Assembly
- Roll out the dough to form 2 discs, which you will have cut out with a pastry ring or large plate.
- Spread a layer of chocolate spread on the first disk, leaving a border.
- Top with the chocolate almond cream and place the bean.
- Moisten the edges with a brush and water.
- Cover with the second disc of dough and seal the edges with your fingers.
- Apply a layer of egg wash with a pastry brush.
- Score the galette with a small knife.
Baking
- Place the galette in the freezer for about 15 minutes.
- Meanwhile, preheat your oven to 356°F /180°C.
- Bake for about 45 minutes until golden brown.
Tips for this recipe
Storage instructions
Room temperature: The galette des rois can be stored at room temperature for 2 to 4 days, under a tea towel, in a storage box or under plastic wrap.
Freeze: You can also store it for up to 3 months in the freezer, in a tin or conservation bag. Simply let it thaw gently at room temperature.

Description
Recipe for the Nutella galette des rois, a quick puff pastry and an almond filling cream flavored with Nutella (for a 10 inch / 25 cm cake about 10-12)
Ingredients
Nutella Almond cream
- 100 g (½ cup) of Unsalted Butter - softened
- 60 g (¼ cup) of granulated sugar
- 2 Eggs - room temperature
- 100 g (1 cup) of Almond meal
- 100 g (½ cup) Nutella spread
Instructions
Rough puff pastry
- Place all ingredients, flour, chopped cold butter, salt and ice water in the bowl of a mixer fitted with the dough hook.
- Mix for about 1-2 minutes at medium speed until you have a crumble-like mixture (large pieces of dough).
- Gather the dough with your hands to form a dough in which the butter pieces are still visible.
- On a floured work surface, roll out the dough lengthwise to form a rectangle.
- Make a single turn by folding the dough in 3 then turn the dough by 90° to get the opening on the side.
- Repeat this last step 3 times (for a total of 4 single turns).
- After these foldings, you can immediately use the dough or keep it in the fridge wrapped in cling film.
Nutella Almond filling cream
- Place all ingredients in a bowl, softened butter, powdered sugar, almond meal and eggs and beat with a whisk until smooth.
- Add the Nutella and mix again to incorporate it
Baking
- Preheat the oven to 356°F / 180°C and bake the galette des rois for about 45 minutes until golden brown.
- Let it cool down a little before serving it a little warm.
